Some updates from a fun weekend.
Saturday Morning
The day promised no rain, so after milking, I thought I would go for a run. Gerard told me I should run and take the ferry over to a town nearby, Cobh. This town was the Titanic’s last port-of-call before the accident, and there is a museum experience that is supposed to be grand. Well, about 9 miles later, I have made it into Cobh, and the titanic museum is another 2 miles up-hill. At this point, I am tired and hungry, so I grabbed a coffee and energy ball snack at the boat harbor. Then, I asked Stephanie to come rescue me from a 9 miles walk back. The Titanic museum is still on my to-do list.


Saturday Evening
I went into Cork with Julia and a new friend, Diana. Both Julia and Diana are from Brazil and speak Portuguese. They taught me to say, “bora”, which is slang for, “let’s go”. Turns out, there are lots of Brazilians in Ireland. Ireland is one of the easier countries to get a visa for those looking to learn English, work, or seek refugee. I also learned that many Brazilians have Italian citizenship because of Italian ancestry. This also makes it way easier to get a work visa in Europe! Julia is looking for jobs in Cork to have after this work-stay. She keeps sending me nursing jobs, and I keep having to remind her I am not actually allowed to work/make money here.
Anyways, we went out Saturday night, and I had a great time dancing to some live music, watching the rugby semi-finals, and drinking baby Guinness’. Baby Guinness is WAY better than Guinness. It is a little shot of Kahlua and Baileys, and it is delightful.

Sunday Afternoon
Gerard asked me to, “bring the cows in”. I had no idea what that meant or entailed, but I said sure. With very few instructions, I was on my way to herd cows. But, no matter how many times I said, “MOOOOOve”, the cows just kept chillen. After running around and slapping cows backsides for nearly 2 hours, I finally had them all in. When I joined for dinner, everyone was laughing at the videos I took. Someone asked, “have you ever thought about getting a herding dog”. I laughed and said, “but they have me!”. Seriously though, I would like to personally shout-out all herder dogs because it’s hard work!
Sunday Night
I cooked again! I was going to make a chicken pot pie, but I needed to make it gluten-free for someone joining. The lack of gluten-free flours, xanthax gum, etc. deterred me from trying to make a crust. Therefore, I made a chicken pot pie casserole with a cornbread topping made from corn flour. Honestly, it was OK. It didn’t have enough flavor/seasoning to it, in my opinion. However, it was still edible and everyone grabbed a second helping. Success!
